Darlish is the UK’s first Persian-inspired ice cream brand, founded by Laura Dawson in St Albans. Our small-batch ice cream draws on the flavours of Laura’s Persian heritage – saffron, rose and pistachio – alongside old favourites like Belgian chocolate.

Made on a Hertfordshire farm, every batch is crafted with care and made to be distinctive without ever being overpowering.

Our story so far

From a kitchen in St Albans to parlours across London and Hertfordshire – the spirit of Darlish has stayed the same.

Darlish began in 2017, when Laura Dawson started making small-batch ice cream at home in St Albans, inspired by the saffron, rose and pistachio flavours she grew up with. A bespoke cart came next, followed by the first Darlish parlour. Today, the brand continues to grow while staying independent, handmade and rooted in its original idea: heritage flavours made for a British palate.

I wanted the Joon Sundae to feel nostalgic, like a little piece of home that we could all enjoy and find comfort in. They wanted to do a baklava flavour but it proved elusive – the pastry would go soggy and the flavours were muted. In a moment of inspiration, they squidged a scoop of ice cream into a wedge of pistachio baklava – now it’s the signature product. #1 flavour Saffron, rose and pistachio – the ice-cream that started it all.
